This dish, one Sammy’s favorites to have when he’s in Cabo, comes from his friend and longtime manager of the Cantina, Jorge Viana. Sammy calls this Jorge’s “greatest hit” and once the aroma of the braising meat fills your kitchen, you’ll begin to understand why. Pork shank is braised until it’s tender and falling off the bone, a spicy tomatillo and chile sauce adds wonderful acidity and spice to the dish. You’ll savor each bite of it alongside “refried” black beans and a cabbage and jalapeño slaw. Whether eaten with a fork or wrapped in warm flour tortillas, this meal will satisfy like only Mexican home cooking can.
